When you haven’t got much to work with to create a bento, you make a salad. A little bit of this . . . a smidge of that . . . throw it all together, and there you have it!
My son was so excited to see me prepare his colorful salad. Oh, and he ASKED for a salad for lunch. So, I broke up romaine lettuce topped with a few grape tomatoes that were sliced to spread out the color. I chopped up bits of fresh pineapple and sliced up some carrot sticks into match sticks. Sprinkled on some sesame seeds and then prepared a homemade dressing.
The salad dressing consisted of a dash of olive oil, a bit of rice wine vinegar, a dash of soy sauce and a drop or two of maple syrup. Shake, pour, toss…done.
I finished the salad with a few shavings of fresh parmesean cheese.
Done. Yum. Son returned home with a completely empty bento box and declared he ate his whole salad.

Sounds like a great dressing. I’ll have to try that. My kids love salads and often request them. Annabelle had the equivalent of 3 the other day, when she kept asking for “more salad, please!” So, yesterday I made it twice as large as usual with fresh spinach, sliced petite baby carrots, grilled chicken fajita strips, sliced almonds, diced tomatoes, and a mozzarella cheese stick sliced into little coins, craisins, and some Italian dressing.
